A caviar tasting can be a small part of dinner rather than an elaborate event. Give it a place at the beginning of the meal, while everyone has time to notice what is in their spoon. A few guests, one carefully chosen caviar and a little preparation are enough.
For a gathering at home in the UAE, plan the chilled handover and the serving space before the table decorations. Then keep the tasting relaxed: try the caviar on its own, offer a simple accompaniment, and let guests decide which they prefer.
Choose one caviar and a clear purpose
You do not need a flight of several varieties for a first tasting. One caviar gives everyone a shared starting point and leaves room to explore its texture and flavour without turning the evening into a test.
ANNA Dutch Osetra is a useful starting point. Its UAE product description identifies the species as Acipenser gueldenstaedtii, lists sturgeon eggs and sea salt as the ingredients, and describes a creamy, almost nutty flavour.[8] Treat that tasting note as an invitation to pay attention, not a flavour every guest must find.
There is also a story to share without making a speech. ANNA Dutch's farm is in the Netherlands, and its UAE farm page describes caviar made with roe and salt, without preservatives or stabilisers.[2] Keep the introduction brief, then taste.
Work out the quantity before ordering
Decide whether the caviar is a short tasting before dinner or the main focus of the gathering. That distinction is more useful than a rigid rule about grams per person.
The Osetra product page lists a 28 g jar and 50 g, 125 g and 250 g tins.[8] As a planning example, a 50 g tin shared equally among four guests gives 12.5 g each. This is a way to budget a small tasting, not a recommended serving size or a promise of how many spoonfuls it will provide.
If you want guests to return for more, or to try several accompaniments, discuss the quantity with the UAE team. Confirm the size and delivery arrangement for your order rather than assuming every listed option will be available on your chosen date.
Make the cold chain part of the hosting plan
Arrange for someone to receive the delivery and refrigerate it immediately. ANNA Dutch's UAE delivery policy explains that the thermal bag and ice packs protect the product in transit but do not replace refrigeration.[9] Follow the storage temperature and use-by instructions on your particular pack; ask the team before serving if those instructions are unclear.
The US Food and Drug Administration gives 4°C or below as general refrigerator guidance for perishable food.[10] That is not a caviar-specific storage specification: your product's instructions may require colder conditions. An appliance thermometer is more useful than guessing from how cool the shelf feels.
Set up the tasting indoors, away from direct sun, rather than leaving the caviar on a terrace while guests arrive. Keep it refrigerated and unopened until serving, then serve chilled over ice, as ANNA Dutch's UAE support guidance advises.[9] Prepare the accompaniments first so the opened caviar is not waiting for the rest of the table.
Start with a plain taste
Offer each guest a small taste without garnish. Suggest noticing the appearance of the pearls, their texture in the mouth and the flavour that remains after swallowing. There is no need for specialist vocabulary; “creamy”, “salty” or “I prefer it with bread” are perfectly useful observations.
ANNA Dutch recommends a mother-of-pearl, horn, glass or other non-metallic spoon.[9] Use clean serving utensils and give guests their own tasting spoons, rather than returning a used spoon to the shared container.
Offer accompaniments without crowding the table
For the second taste, try a small plain blini or a piece of lightly toasted bread with a modest spoonful of crème fraîche. These are serving suggestions, not a compulsory formula. Keep portions small enough that guests can compare the dressed bite with their first taste.
Put chopped onion, lemon and other assertive additions on separate dishes if you want to offer them. Let guests add them after trying the caviar plain. A tasting is easier to follow when every bite does not arrive with several competing ingredients.
For an alcohol-free table, offer chilled still or sparkling water. If you would like another option, try an unsweetened iced tea alongside it. Let personal preference guide the choice rather than insisting on a single “correct” pairing.
Keep service brief and purposeful
Bring out what you intend to serve, keep it chilled, and avoid turning a short tasting into an all-evening buffet. The producer's FAQ recommends consuming caviar on the day the tin is opened.[6] This does not mean it can remain out of refrigeration all day.
For food needing refrigeration, the FDA advises no more than two hours at room temperature, reduced to one hour when the air temperature is above 90°F (about 32°C).[10] These are general safety limits, not suggested caviar serving times. Keep the tasting much shorter and follow any stricter product instructions.
